Quality that endures:

How „Bianchi“ relies on

trust-based partnerships

Falstaff visited the Swiss delicacy purveyor „Bianchi“ in the Appenzellerland region—at the farm of „Sepp Manser“ and at the „Appenzeller Huus,“ two long-standing partner businesses. What is created here is more than just high-quality poultry: it is the result of trust, respect, and an uncompromising commitment to quality that you can taste.

Tradition obliges and inspires. For over 140 years, the name „Bianchi“ has been synonymous with culinary quality in Switzerland. What once began as a fish and seafood trade is now a broadly positioned family business with a focus on meat, poultry, and plant-based alternatives. Led by the fifth generation—Dario and Luca Bianchi, along with Alessandro Battaglia—the company remains true to its values while simultaneously looking ahead.

Quality begins on the farm. The journey to quality does not begin in production, but on the farms of our partner businesses. One of these is „Sepp Manser“ in the Appenzellerland. On his farm, the Alpstein chickens grow up with fresh air, plenty of space, and sustainably sourced feed. The quiet surroundings, the respectful treatment of the animals, and the close cooperation with „Bianchi“ ensure a final product that clearly stands out from industrial mass-produced goods. The meat is tender, aromatic, and, thanks to the way the animals are kept, truly authentic. This is no coincidence, but the result of a holistic concept that combines regionality, animal welfare, and flavor.

Partnerships with vision. „Bianchi“ relies on partnerships that are not just economic but also personal. Anyone who becomes part of the supplier network can count on long-term cooperation. This creates planning security for producers and consistent quality for the gastronomy sector and end customers.

Unlike short-term delivery contracts, this creates close, resilient relationships with people who share the same values. Trust, transparency, and mutual development are at the center.

„When we select our producers, we do so with a very long-term perspective for the next 30 years, not for the next three years. That is at the heart of what we do.“
Alessandro Battaglia, „Bianchi“

Sustainability as an attitude. At „Bianchi,“ sustainability is not just a marketing buzzword but is deeply anchored in daily actions. The company thinks in generations—both internally and externally. The selection of partners, the type of processing, and the logistics follow a clear principle: respect for people, animals, and the environment.

From the farm to the kitchen. The difference is also evident in the gastronomy sector. At the „Appenzeller Huus,“ for example, Alpstein chickens are a regular feature on the menu. The short journey from the farm to the kitchen, the transparent origin, and the authentic taste make them a reliable component of many menus.

It is these small but decisive differences that characterize „Bianchi“ products: honest craftsmanship, high-quality raw materials, and a clear stance.

For today—and for tomorrow. Working with „Bianchi“ today means choosing a partnership with perspective. The combination of innovation and an awareness of origin makes the company a reliable pillar of the Swiss culinary landscape.

Whether on the farm, in production, or in the restaurant—„Bianchi“ products impress not only with their taste but also with their story. And that is exactly what makes the difference.
