Luca Bianchi, how did the idea of delivering to private households come about?
We were also surprised by the coronavirus events and the lockdown, of course. Purchasing was not prepared for this; we have wonderful products ready for the gastronomy sector, which we normally supply daily. And to counteract food waste, a webshop for private households seemed like an optimal solution.

Back to the roots, then, when Bianchi ran the legendary shop on the Limmat (see archive image above).
Exactly, that’s how we thought about it too. Our webshop is a small shop where everyone can order from home. We constantly add new items or remove them.

Does the selection change daily?
Not every day exactly. But it’s worth checking online regularly.

Can you tell us about the star chefs‘ bestsellers that you can now prepare at home?
Our Ojo de Agua Beef from Dieter Meier, for example. And our Scottish smoked salmon, which is smoked according to our own recipe and can now be ordered for home delivery. In normal times, this is not possible.

Bianchi for private households: The „Ojo de Agua“ beef from Dieter Meier is the bestseller.

Do you also deliver fish and seafood to homes?
No, fish deliveries to private households are tricky. We are not prepared for that. But smoked salmon is definitely available.

Chefs buy large quantities. In times of coronavirus, you can almost only cook at home for 2 to 4 people. Can smaller portions also be ordered from Bianchi?
Of course. The Ojo de Agua Beef is even portioned to the desired size—200, 300, or 600 grams, according to customer preference.

What do you recommend for inexperienced cooks?
All cuts we offer can be easily prepared at home. Especially the middle cuts. When roasted whole—around two kilograms—it turns out particularly well. It is juicy and tender.

Dario (l.) and Luca Bianchi are the partners of professional chefs. During the coronavirus crisis, they also deliver to private households.

How long does it take from order to delivery?
If we receive the order by 12 noon, it will be delivered the next day. Except on weekends, then the ordered goods arrive in households on Tuesday.

How long do the meat cuts keep in the refrigerator?
Meat does not spoil quickly. It can be stored in the refrigerator for one to two weeks. Since the meat is delivered vacuum-sealed by us, it can also be stored in the freezer without any problems.
