Obsiblue – the blue beauty from Bianchi

A Brief Guide to Fish & Crustaceans

The blue prawn is caught exclusively at night. To avoid stress. And to guarantee optimal quality!

BLUE AS THE SEA. Obsiblue is a true delicacy, farmed in the world’s largest saltwater lagoon. New Caledonia, a UNESCO-protected reserve, is located in the southwestern Pacific. The marine landscape is paradisiacal, the farming conditions are excellent, and the quality of these creatures is of the finest. They grow for nine months, feeding primarily on plankton, which gives them their exceptionally blue color.

SASHIMI QUALITY. Obsiblue prawns are caught exclusively at night to avoid stress on the crustaceans. They are then immediately flash-frozen, so that when thawed, they taste as fresh as if they had just come from the sea. With great texture and surprising sweetness. This is why Obsiblue prawns are most often served raw by top chefs around the world. To this day, it remains the only foreign prawn accepted by all Japanese chefs de cuisine as sashimi quality. „The Obsiblue prawn is truly unique, and enjoyed raw, it is exceptional.“

QUALITY ASSURANCE ON SITE. The license for Obsiblue farming is limited to only a few families in this Pacific paradise. Space in the lagoon is restricted. Therefore, only 100 tons of this delicacy are offered each year – with total quality control. Thanks to its special status as an overseas department of France, New Caledonia offers ideal conditions for quality assurance and rapid transport to Europe.
