Swiss Caviar from Mountain Spring Water

The Making of Swiss Alpine Caviar in the Kander Valley

Enjoyment, Swissness, and Lifestyle: From the alpine mountain world emerges a delicacy that unites craftsmanship, quality, and tradition. Oona Caviar is the first and only Swiss caviar – harvested from sturgeon raised in the pure mountain spring water of the Kander Valley. Born from the utilization of the warm Lötschberg mountain spring water, Oona stands for authentic enjoyment: sustainably, naturally, and produced with the finest craftsmanship.

Bianchi Takes a Look. Together with Oona Caviar, we have developed our own Bianchi x Oona Caviar. What we particularly value in our partnerships is the closeness and personal exchange – especially when creating something new together.

During our visit to the Oona headquarters in Frutigen, it became clear once again how much dedication, experience, and craftsmanship go into the production of Swiss Alpine Caviar – from fish farming to the final refinement.

Sustainability and animal welfare are top priorities in fish farming. The interplay of Lötschberg spring water and modern recirculation technology makes cultivation particularly resource-efficient: the water is reprocessed and only a small portion is replaced by fresh spring water. The sturgeon grow in constantly tempered spring water, which is continuously purified by high-performance filter systems, thus ensuring exceptionally high water quality.

The Taste of Swiss Caviar. The focus of production is consistently on freshness and purity. Oona Caviar is produced without any additives or preservatives – and, as one of the few producers worldwide, is processed entirely without borax. The result is a caviar with a delicate skin, fine grain, and tender consistency, whose nutty aroma unfolds harmoniously.

The Siberian sturgeon bred in Frutigen is an impressive living fossil – and at the same time the heart of Oona Caviar. It takes 7 to 12 years for a sturgeon to yield the finest caviar – years full of patience, care, and experience.

While many of the 26 sturgeon species worldwide are threatened by overfishing and destroyed habitats, Oona focuses on sustainable farming and species protection. The fish farm in the Kander Valley is considered a pioneering achievement and demonstrates that responsible husbandry and culinary luxury can go hand in hand.

«Our caviar is distinguished by its freshness and unmistakable taste; it has a delicate consistency, a nutty aroma, and contains no preservatives! Pure. Natural. Sustainable. That is OONA!“»
