Swiss Farmed Fish – Quality with a Clear Conscience

Current Bianchi Specialties, Part 2

Royal Pike-Perch from ecological farming by Thomas Muri and Reto Kaufmann, Lucerne

Fish consumption is rising, yet fish stocks in the wild are dwindling. Overfishing is a major issue that concerns not only consumers but also fishers, producers, and suppliers. The solution: sustainable fish farming.
Eating fish is healthy, and with growing nutritional awareness, many increasingly prefer white meat from the water over red meat. Thanks to high-quality fish farms, also known as aquaculture, this is once again justifiable from an ecological perspective. And farming is successful: in 2016, the share of farmed fish in the Swiss retail sector exceeded 50% for the first time.

Thomas Muri and Reto Kaufmann, who breed royal pike-perch in the Lucerne Napf region, are proud of this promise. Short transport routes also enable an incredibly fresh product, which is not accessible to landlocked Switzerland for saltwater fish. Those who choose Swiss fish also support our farmers and the national economy. Fish farms now exist throughout Switzerland: for example, the family-owned company Guibert Pisciculture, which breeds trout and char at their fish farms in Chamby near Montreux and Belp in the Canton of Bern. Bianchi also works closely with this exemplary company, delivering their fish daily throughout Switzerland.

A delicacy: Barramundi from Balterswil

However, it is not only classics like pike-perch, trout, and char that are bred in Switzerland. Thanks to technology and innovation in water treatment, the Aquaponic Gardens fish farm in Balterswil has even succeeded in sustainably breeding a small exotic species. Barramundi is a unique fish that is already in high demand worldwide due to its excellent nutritional values. With only half the calories of salmon and plenty of omega fatty acids, this healthy fish is also very popular among the health-conscious.
