The Devil Among Fish: A Fascinating Deep-Sea Dweller

March 14, 2025

Admittedly, the monkfish is no beauty. Its disproportionately broad head with tiny, close-set eyes is imposing, as are the many sharp teeth in its enormous mouth. Yet beneath the soft, scale-free skin of this predatory fish lies a true treasure, particularly prized in fine cuisine: snow-white, boneless fillet meat with a delicate bite, as versatile as fillet or steak.

Habitat and distribution: The monkfish is found primarily in the cold waters of the Pacific. It favors deep marine regions from 20 to over 1,000 meters and prefers to stay on sandy or muddy seabeds. There it lies in wait, well camouflaged, for passing fish and crustaceans. The monkfish is a skilled hunter. It uses its „fishing rod appendage“ to lure prey. As soon as a fish or other marine creature comes within range, its enormous mouth shoots forward in a flash and engulfs the prey with suction. Its diet consists mainly of smaller fish, cephalopods, and crustaceans.

The monkfish is extremely versatile in the kitchen. Typical preparation methods include:
• Pan-frying: Seared in a pan with butter or olive oil, the monkfish reveals its full aroma. It pairs particularly well with fresh herbs such as rosemary and thyme.
• Grilling: Because its flesh is very firm, it is excellent for grilling. It can be placed on the grill whole or cut into medallions.
• Steaming and poaching: These gentle cooking methods preserve the natural flavor and succulent texture of the fish.
• Braised dishes: In France, monkfish is a classic component of „bouillabaisse,“ a savory fish soup.
